Sweet Potato Pecan Pie

Sweet Potato Pecan Pie is not just a dessert; it’s a warm, comforting hug from the South. Ingredients:

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 3-4 tablespoons ice water

For the Sweet Potato Filling:

  • 2 medium-sized sweet potatoes, cooked and mashed (about 1 1/2 cups)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

For the Pecan Topping:

  • 1 cup pecan halves
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons pure maple syrup
  • Pinch of salt

Instructions:

For the Pie Crust:

  1. In a food processor, combine the flour and salt.
  2. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Slowly add ice water, one tablespoon at a time, until the dough starts to come together.
  4. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. Roll out the chilled dough on a floured surface and fit it into a 9-inch pie dish. Crimp the edges and set aside.

For the Sweet Potato Filling:

  1. In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, eggs, milk, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  2. Pour the sweet potato mixture into the prepared pie crust.

For the Pecan Topping:

  1. In a separate bowl, mix together the pecan halves, brown sugar, melted butter, maple syrup, and a pinch of salt.
  2. Gently spoon the pecan topping over the sweet potato filling, spreading it evenly.

Baking:

  1. Preheat your oven to 350°F (175°C).
  2. Place the pie on a baking sheet to catch any drips.
  3. Bake for 45-55 minutes, or until the center is set and the pecans are golden brown.
  4. Let the pie cool completely before serving.

Slice and Serve: Serve your Sweet Potato Pecan Pie with a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy the harmonious blend of sweet potato and pecan flavors that make this pie a Southern classic and a delightful treat for any occasion.
