Slow-Cooked Holiday Roast Beef: A Festive Delight

Ingredients:

  • 4-5 pounds of boneless beef roast (such as chuck roast or rump roast)
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 onions, roughly chopped
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 2 bay leaves
  • 1 sprig of thyme
  • 1 sprig of rosemary

Instructions:

1. Prep the Roast:

  • Begin by patting the beef roast dry with paper towels. This step is crucial to achieving a beautiful sear later on.
  • In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and black pepper to create a flavorful rub.
  • Rub this mixture all over the roast, ensuring it’s evenly coated. Let it sit for at least 30 minutes at room temperature to allow the flavors to meld.

2. Sear the Roast:

  • Preheat a heavy-bottomed skillet or Dutch oven over medium-high heat.
  • Add a splash of olive oil and sear the roast on all sides until it forms a gorgeous brown crust. This should take about 3-4 minutes per side.

3. Slow Cooking Magic:

  • Transfer the seared roast to a slow cooker. If you don’t have a slow cooker, you can continue cooking in the Dutch oven.
  • Pour in the beef broth and red wine (if using) to deglaze the skillet, scraping up all those flavorful bits.
  • Add the chopped onions, carrots, potatoes, bay leaves, thyme, and rosemary sprig around the roast.
  • Set your slow cooker to low and cook for 8-10 hours. Alternatively, if you’re using a Dutch oven, cover it and place it in the oven at 275°F (135°C).

4. Bask in the Aromas:

  • As your home fills with the tantalizing aroma of slow-cooked goodness, you can relax and attend to other holiday preparations.

5. The Grand Reveal:

  • Once the cooking time is up, carefully remove the roast from the slow cooker and let it rest on a cutting board for 15-20 minutes. This allows the juices to be redistributed, ensuring a juicy, tender roast.
  • While the roast is resting, you can strain the cooking liquid to make a flavorful gravy to serve alongside.

6. Slice and Serve:

  • Slice the roast beef into thin, succulent pieces and arrange them on a festive platter.
  • Serve with your choice of sides, whether it’s creamy mashed potatoes, roasted vegetables, or buttery dinner rolls.
